SANTIAGO DE LOS CABALLEROS, DOMINICAN REPUBLIC – The Dominican Republic once again inscribed its name in golden letters in the annals of world records this Saturday, July 26, 2025, by officially conquering the Guinness Record for the largest mofongo on the planet, an unprecedented feat celebrated during the cultural event "Santiago Inspira" in the Parque Central.
With an official weight of 1,226.8 pounds (556 kilograms), this monumental creation of mashed plantain transcends a simple recipe: it constitutes a symbol of unity, identity and Dominican flavor projected onto the international stage.
A Gastronomic Feat of Epic Proportions
The preparation of this colossal mofongo required more than 5,500 plantains and 800 pounds of pork rinds, complemented with garlic, oil and a special broth of 400 gallons. The dish was prepared as a single piece —as required by Guinness regulations— under rigorous standards of hygiene, preservation and structural cohesion.
Official certification was granted by Susana Reyes, Guinness World Records judge, who validated in real time the fulfillment of all requirements, including its total consumption without waste. More than 29 chefs and culinary students participated in this endeavor, under the leadership of chef Clara Olivo and producer Eligio Reyes, in coordination with teams from SMA Group, Todo Ticket, Kanibaru and Kibou.
The event brought together thousands of people, who applauded with tears of emotion and pride when it was officially proclaimed: "It's official, you have the record!"
Mofongo: Tradition, History and Cultural Resistance
Mofongo represents much more than a side dish or typical plate: it constitutes a living testimony of Afro-Caribbean history. With roots in African fufu and adapted with green plantain, garlic and pork rinds by Dominican generations, mofongo symbolizes the ingenuity, resistance and characteristic flavor of the people.
This conquest not only positions mofongo as a world-recognized culinary heritage, but also places Santiago de los 30 Caballeros on the international gastronomic map as the epicenter of Dominican creativity.
More than a Culinary Creation
The feat was organized through complex logistics that included: thermal conservation, structural assembly of the mofongo into a single compact mass, staggered cooking schedule, and total distribution to the public, an unavoidable requirement established by Guinness.
Santiago was transformed for a day into the nerve center of Caribbean cuisine. Children, grandmothers, cooks, and gastronomic enthusiasts from across the country came to taste and be part of this historic milestone. The mofongo was served on hundreds of plates while its aroma flooded the Parque Central, and cameras, drones, and mobile phones captured the moment for posterity.
Dominican Gastronomy Continues Its Ascent
This new record comes at a strategic moment when Dominican gastronomy seeks recognition as a Country Brand. Initiatives like "Santiago Inspira" demonstrate that Dominican cuisine not only nourishes the body, but also unites generations and transcends international barriers.
The Dominican Republic had already achieved other culinary milestones, such as the world's largest sancocho in 2023 and the largest majarete in 2024. Today, with mofongo, the country reaffirms that its seasoning also constitutes world heritage.
Because if anything was demonstrated this July 26, it's that mofongo is Dominican... and now it's also a world record.
